Muffins.

I had a huge list of things to get done today.  I did pretty well, although my house still looks like a war zone.  I folded laundry, baked yummy muffins, washed diapers, wrote thank you letters, read the first chapter in a book that I have been dying to read, and playing with the kids.  Phew!  I am tired!  Leah was a crabby one today, so I decided to let her "help" me make muffins.  They are super good, and are healthy for you too.  There is 1/2 an egg in each one.  I'll post the recipe on here if anyone is interested... but first a picture of the kids!




Walnut Raisin Muffins
Ingredients

¼ cup sifted Organic Coconut Flour
2 tablespoons Organic Virgin Coconut Oil or butter, melted
2 tablespoons coconut cream/milk
3 eggs
3 tablespoons honey (I also made some with pure maple syrup.. they were great! I also only did 2 tablespoons and added a little stevia to keep the sugar down)
¼ teaspoon salt
¼ teaspoon vanilla
¼ teaspoon baking powder
1/3 cup raisins
1/3 cup walnuts, chopped
Method

Blend together eggs, butter, coconut milk, honey, salt and vanilla.



 Combine coconut flour with baking powder and whisk into batter until there are no lumps. 


Fold in raisins and walnuts.



Pour batter into greased muffin cups.


 Bake at 205 Degree C (400F) for 15 minutes. Makes 6 muffins.

Ok.. So I know this has nothing to do with the muffins.. but have you ever seen one of these?:


They are filled with baking soda and have a little suction cup on the back of them to stick inside your fridge.  Seems cool, right?  Well, while putting it in there you have to peal off a sticker and it says this:


"REPLACE WHEN BAR IS PINK"  Now, here is where I am very confused... isn't the bar already pink???
I don't get it... Oh well.
